Description
Put 2
cups of fresh basil in a food processor or blender. Add 4
oz. of grated parmesan cheese, 1/2 cup olive oil, 1 or 2 cloves
of garlic and 1/4 cup of pine nuts (walnuts can be substituted).
Blend until a creamy consistency. You can toss it with hot
spaghetti for a wonderful meal or use it as a spread or dip.
It can be kept in small jars but make sure to pour a thin
layer of olive oil on top to keep it from darkening. Can be
kept for up to 1 week in the refrigerator or frozen for longer
times.
