 Baked Eggplant (vegan)
   

Ingredients

  • 2 Eggplants, washed
  • 1 Onion, chopped
  • 2 Tomatoes, chopped
  • 1/2 tsp. Basil
  • 1/2 tsp. Oregano
  • Salt & Pepper
  • 1/2 c. Corn flakes, crushed
  • 3 Tbs. Oil
 


Description

Preheat the oven to 375 (F)
In a pan using the oil, saute the onion, add the washed and cubed eggplant and continue sauteing. Add the tomato and cook all until well blended.
Add seasonings and place in a lightly greased baking dish. Add 1/2 cup of corn flakes and mix into the mixture. Sprinkle the remaining 1/2 cup on top.
Cover the dish with lid or tin foil and bake for 20 min. remove the lid or foil and bake for 10 more minutes until the top is golden brown.
I usually serve this with brown rice.
