Ingredients
- 1 Onion, chopped

2 cloves Garlic, minced

1Tbs. Oil

450 grams Carrots, cooked and pureed

225 grams Cashew nuts, ground

115 grams Breadcrumbs

Nutmeg
-
Sage
-
Salt & Pepper

1 Tbs. Yeast

I use it as a holiday meal as it is
quite rich. |

Description
Preheat oven to 375 (F.)
Cook the carrots until soft. Saute the onions and garlic in the oil.
When the carrots are tender, drain and transfer to a food processor or
mixer. Puree the carrots with the onions, garlic and cashews.
Add the
remaining spices and breadcrumbs. Blend until the mixture is smooth.
Place in a greased baking dish or loaf pan and bake for 1 hour.
Let cool a
bit before serving so it firms up. Otherwise it may crumble when you serve
it. It tastes great hot or cold.
