 Curried Squash (pumpkin) with Chick peas (vegan)
 

Ingredients

  • 1 Tbs. Oil
  • 1 Onion, diced minced
  • 2 c. Squash or Pumpkin, cubed
  • 1 can Chickpeas, drained
  • 3 Tbs. Ginger, minced
  • 1 Chili pepper, minced
  • 2 Tomatoes, chopped
  • 1 Tbs. Curry powder
  • 2 c. Water
  • 1 tsp. cummin
  • 1/4 tsp. Tumeric
  • 2 cloves Garlic,
  • Salt & Peeper to taste


Description

In a large saucepan, heat the oil. Saute the onion, garlic and chili pepper and add the ginger.
Add the tomatoes, curry powder tumeric, salt and pepper and cook for 2 min.
Add the squash or pumpkin, water and chickpeas cook over med heat until the squash is tender.
Serve over rice, couscous or other grain.
