Squash (pumpkin) with Chick peas

Ingredients
- 1 Tbs.
Oil
- 1 Onion,
diced minced
- 2 c.
Squash or Pumpkin, cubed
- 1 can
Chickpeas, drained
- 3 Tbs.
Ginger, minced
- 1 Chili
pepper, minced
- 2 Tomatoes,
chopped
- 1 Tbs.
Curry powder
- 2 c.
Water
- 1 tsp.
cummin
- 1/4
tsp. Tumeric
- 2 cloves
Garlic,
- Salt
& Peeper to taste

Description
In a large
saucepan, heat the oil. Saute the onion, garlic and chili
pepper and add the ginger.
Add the tomatoes, curry powder tumeric, salt and pepper and
cook for 2 min.
Add the squash or pumpkin, water and chickpeas cook over med
heat until the squash is tender.
Serve over rice, couscous or other grain.
