 Hot Chili Pasta (vegan)
   

Ingredients

  • 1 cup Pasta ( penni, macaroni etc)
  • 1 Tbs. Oil
  • 1 med Onion, diced
  • 1 Green pepper, diced
  • 2 stalks Celery, diced
  • 3 cloves Garlic, minced
  • 1 can Stewed Tomatoes
  • 1 can red Kidney beans, drained can Corn, drained
  • 2 Tbs. Chili powder
  • 1 tea. Cummin
  • 2 Tbs. Oregano
  • 1 tea. Black peeper
  • 1/2 tea. Salt


Description

Cook the pasta until al dente, drain in a colander.
In a large sauce pan, heat the oil. Saute the onion, bell pepper, celery and garlic. Cook for 7 min.. Stir in the tomatoes, beans, and corn.
Season with the chili powder, oregano, cumin, pepper and salt. Simmer 5 minutes over a low heat. Remove from heat and let stand for 5 minutes before serving.
Ladle sauce over the pasta.
