 Lentil Loaf (vegan)
   

Ingredients

  • 1&1/2 c. Lentils, uncooked
    (pref. red lentils)
  • 1 c. Brown Rice, uncooked
  • 2 Onions, chopped
  • 5 Tbs. Tomato puree
  • 1 Vegetable Bullion cube
  • 3 Tbs. Molasses or Tamarind sauce
  • 2 tsp. Mustard
  • 2 Tbs. Soy Sauce
  • 1 Tbs. Sage
  • Salt & Pepper
  • Tabasco sauce


Description

Preheat oven to 350° F
Cook the rice until soft. Cook the lentils at the same time, but in a separate pot with 1 the vegetable bullion and a bay leaf.
Sauté the onions. When the rice and lentils are soft, drain and mix together. Add the onions and other seasonings. Pour into a lightly greased loaf pan and place in the oven. Bake for aprox. 1 hour.
