Ingredients
- 1 c
Snow peas, coarsely chopped
- 1-2
Tbs. fresh Ginger, minced
- 1 Chili
pepper, crushed
- 1 Onion,
chopped
- 1/2
lb Tofu, cubed
- 1/2
c Peanut butter
- 1/4
c Soy sauce
- 1/3
c Lemon juice
- 4 Tbs.
Cilantro, chopped (can use coriander if cilantro is not
available)
- 8 oz.
Rice vermicelli

Description
Heat
the oil in a large skillet. Saute the onion and add the snow
peas, ginger, chilli pepper, stir-fry for a couple of minutes.
Stir in the tofu and stir fry for a couple more minutes. Blend
the peanut butter, soy sauce, lime juice and cilantro adding
a bit of water if need to make more liquid. Pour over vegetables
and remove from heat.
Cook the rice vermicelli in boiling water. Drain and server
sauce over the vermicelli. Serve immediately.
