 Black Beans and Rice (Caribbean) (vegan)


Ingredients

  • 1 lb. Black Beans (dried)
  • 11/2 Qt. Veggie bouillon cube
  • 1 large Onion, finely chopped
  • 2 cloves Garlic, minced
  • 2 Tbs. Cumin
  • 2 Tbs. Oregano
  • 2 Bay leaves
  • 2 tsp. Salt
  • 1/2 tsp. Pepper
  • 1/2 oz. Vinegar
  • Pinch of Sugar
  • 11/2 cups Rice

Description

This is a very hearty dish that is a very filling complete protein.

Rinse beans, place in a large pot with water and salt and bring to a boil. Add vegetable bouillon cube, garlic pepper, cumin, oregano, vinegar, and sugar reduce heat and simmer until beans swell and are tender...usually about 2 hours (stir occasionally).

When beans are soft take about 2 cups of beans puree and add back to the rest in the pot. If needed more salt and spice may be added according to taste. Increase heat to medium and cook until beans are steaming hot.

Serve over hot rice with optional chopped onions, sour cream or lemon wedges to personally add as flavorings.
