 Gnocchi with Spinach Sauce
   

Ingredients

  • 1 pkg. frozen Spinach
  • 1 small Onion chopped
  • 1/3 cup Milk or Cream
  • 2 Tbs. Flour
  • Nutmeg
  • Salt
  • Dash of Tabasco
  • 1 pkg. gnocchi

I have had a good crop of spinach this year (2000) so have been making lots of spinach meals, adding much to our good health and happiness.

The gnocchi I buy in the store, as they are very time consuming to make...the spinach I grow, but use frozen in the wintertime.

Depending on how rich you want to make this meal, you can use milk or cream...

Description

Steam the spinach with the chopped onions. Drain off the liquid (I use it to fertilize the plants) puree the mixture and add the milk as pureeing. Return to the pan and add the flour, salt and nutmeg cook until it thickens.
