Ingredients

  • 1 pkg. Lasagna noodles
  • 3 Tbs. Olive Oil
  • 2 lg. Onion, chopped
  • 3 cloves Garlic, minced
  • 3 lg. Carrots, grated
  • 2 med. Zucchinis, grated
  • 2 Tbs. Italian seasoning mixture basil, oregano, thyme
  • 1 can tomato sauce
  • 2 cups Sour Cream or Quark (German)
  • 1 Egg
  • 2 oz. Parmesan Cheese
  • 200 g. grated Cheese (Mozzarella)
  • Salt and Pepper
This is not a quick meal but it is also not as hard to make as you may think. In Europe we can buy lasagna noodles that do not have to be boiled before making the dish. This makes the meal much easier and less messy to make. I do suggest that you purchase this kind of lasagna noodles.


Description

Prepare a tomato sauce: sauté 1onion in the olive oil. Add the tomato sauce, 2 cloves of garlic, minced and salt, pepper seasonings. To the grated carrots and grated zucchinis add the other onion, chopped, 1 clove minced garlic, and Italian seasonings, salt and pepper and the 2 cups of sour cream and 1 egg.

In a large baking dish place some of the tomato sauce to cover the bottom of the dish. Lay 1 layer of lasagna noodles. On top of the noodles spread 1 layer of the vegetable cheese mixture, Place a layer of lasagna noodles on top a layer of tomato sauce and a layer of grated cheese, followed with another layer of noodles, the vegetable spread and continue, until all the ingredients are used. The top layer should be of grated cheese and on the very top a thin layer of Parmesan cheese. Bake in a 350 oven for about 45 minutes. Allow to cool slightly before serving - it cuts better.
