• Mashed Potatoes

Hearty Meals

There are a couple of meals that are very hearty hot meals for a cold rainy day. In Germany there are many of these days from mid-Oct. to mid-May. These meals do not present themselves beautifully on the plate (they look like "hash"), but taste great and really add fuel to the fire for a cold day.

Description

• Use the jarred or canned lima beans... they have a certain texture and flavor. The fresh and frozen kind in the States, have a different flavor that I use in other meals.
• Make mashed potatoes. Make a creamed sauce using the liquid from the beans, couple of Tbs. of flour, some salt, black pepper.
• Place the creamed limas on top of the mashed potatoes. I serve this with a light lettuce salad. And a dark whole grain bread.
