Description
Wash and
peal the potatoes and cook in salty water. When soft, drain
and coarsely mash.
Sauté
the coarsely chopped onion in 1 tablespoon of butter until
golden brown. Wash and select the spinach and sauté
also in 2 tablespoons of butter. Add the Spinach and the onions
to the potatoes and stir together. Season with Salt, Pepper
and a touch of nutmeg and the vinegar. Stir in the cream or
milk to make smooth mixture. A salad and dark bread make this
meal very hearty and healthy.
