 Spinach & Potato (Belgium and Holland)


Ingredients

  • 1 kg Potatoes
  • 300 g Spinach (leafy)
  • 1Tbs. Butter (melted)
  • 2 lg. Onions (chopped)
  • 2-3 Tbs. Vinegar
  • Salt & Pepper
  • Pinch Nutmeg
  • 125 ml Cream (Milk)


Hearty Meals

There are a couple of meals that are very hearty hot meals for a cold rainy day. In Germany there are many of these days from mid-Oct. to mid-May. These meals do not present themselves beautifully on the plate (they look like "hash"), but taste great and really add fuel to the fire for a cold day.

Description

Wash and peal the potatoes and cook in salty water. When soft, drain and coarsely mash.

Sauté the coarsely chopped onion in 1 tablespoon of butter until golden brown. Wash and select the spinach and sauté also in 2 tablespoons of butter. Add the Spinach and the onions to the potatoes and stir together. Season with Salt, Pepper and a touch of nutmeg and the vinegar. Stir in the cream or milk to make smooth mixture. A salad and dark bread make this meal very hearty and healthy.
