 Vegetable-Bean Stew over Couscous (Morocco)


Ingredients

  • 1/4 c. Salad Oil
  • 1 Onion, chopped
  • 1 Red Pepper, chopped
  • 1 Green Pepper, chopped
  • 1 tsp. Coriander
  • 2 med. Sweet Potatoes cut into 1/4" cubes
  • 1/4 c. Water
  • 2 lg. Tomatoes
  • 1 Tbs. Lemon juice
  • 1/2 tsp. Saffron
  • 2 c. Garbanzo beans, cooked and drained
  • 1 med. Zucchini cut into 1/4" pieces
  • Hot Sauce
  • 1/3 c. Olive Oil
  • 3 tsp. Cayenne pepper
  • 2 tsp. Cumin
  • 1 Garlic, minced
  • 1/4 tsp. Salt


Hearty Meals

There are a couple of meals that are very hearty hot meals for a cold rainy day. In Germany there are many of these days from mid-Oct. to mid-May. These meals do not present themselves beautifully on the plate (they look like "hash"), but taste great and really add fuel to the fire for a cold day.

Description

Sauté the onions, red and green pepper and sweet potatoes in the oil. Add the other ingredients and cook on a low heat until the potatoes are soft. Prepare the hot sauce in a small pan and heat to blend. Make couscous according to instructions. Serve the vegetable stew over the couscous and each may add hot sauce, as they desire.
