Hmmm, after visiting Bretagne
(France, also called Brittany) we came home with new recipes
for a delicious crepe that we had there also known as "galettes".
Made from buckwheat flower and milk and water...or one can
use some apple cidre to wet the buckwheat also. They are delicious
thin crepes that are very hearty and not so rich. The are
not sweet and I must admit the sweet filling do not taste
good with them. But the vegetable fillings such as asparagus,
or spinach and cheese or mushrooms or even a fried egg taste
delicious in them. The Bretons grate any one of their many
wonderful cheeses to fill them and also make a wonderful herb
butter. Also tasty is sliced tomatoes and herbs. The "galletes"
are quite versatile and invite you to be inventive, Galettes
are usually folded around the filling like an envelope.
This is the traditional "Old
Fashioned" recipe, which we really enjoy.
Ingredients
- 500 g (about 2 cups) Buckwheat
Flour (freshly milled if possible)
- Add a bit of Salt

Description
Mix with a bit of milk and water,
2 ladles of water for 1 glass of milk.
 
The batter is spread paper thin
onto a hot griddle. As it is so thin, it is ready to be turned
to the other side right away. The chosen filling placed on
top and then the sides folded around. We make a few and keep
them warm in the oven and then sit down to a wonderful meal.
This meal is rather a family activity to make as well as eat.
We enjoy a glass of cidre or white wine as we begin to make
them. We set a table in the kitchen and will eat as we make
them. Especially fun on a cold weekend evening.
