Omlettes and egg dishes
Omelettes are
healthy and simple to make. I use 2 or 3 eggs per person with a
little bit of water, salt, pepper and cayenne pepper. In a small
skillet melt some butter (1 Tbs. or so). When the pan is evenly
covered with butter, add the egg mixture which has been well beaten.
As the edges of the omelett become firm, lift them up and allow
the egg mixture to run under the cooked portion so that all can
cook well. Just before the top is firm put a spread or vegetables
of your choice in the center. To place the omelet on the plate slide
1 half of the omelett on the plate and then using a spatula flip
the other half so that it folds on top of the first part. Its
easier than it sounds...just takes a bit of practice. There are
many ways that you can vary the omelett fillings. Here are a few
ideas: cheese, any vegetable with a cream sauce, tomato, ricotta,
shredded zucchini with swiss cheese and herbs, guacamole with a
salsa,...
