 Spanish Omelett (Potato Fritatta)
   

Ingredients

  • 5-6 Potatoes (boiled and pealed)
  • 1 Onion (finely minced)
  • 2 Tomatoes
  • Few green or black Olives
  • 5 Eggs
  • 1/4 cup Milk
  • Salt and Pepper
  • Tabasco or cayenne pepper(optional)

A fritatta is an omelett with the vegetables mixed into it...baked in the oven in a quiche pan. It can also be thought of as a quiche without the crust.

Description

Preheat the oven to 325 (F)

Boil and peal the potatoes. Chop the onion.

Place the potatoes, onions, Chopped tomatoes and olives in a greased quiche form. Beat the eggs with the milk and season with the salt, pepper and Tabasco or cayenne. Pour the mixture over the potatoes and place in the oven to bake for about 45 minutes or until firm in the center. This is a very handy meal to fix, it can be dressed up for a Sunday brunch or can be as uncomplicated as a snack to keep on hand. I serve it many times with a soup and salad and fresh rolls.

Zucchini Variation:

Using the same recipe as above, you can grate a medium zucchini and add to the potatoes. Or you can also lay asparagus as another variation.
