 Bulgur Salad Boats
   

Ingredients (4-6 people)

  • 55g Lentils
  • 115 g Bulgur
  • 1 red Pepper
  • 1 green Pepper
  • 1 Onion
  • 55g Pine nuts
  • 2 Tb. Dried Herbs
  • Juice from 1 Lemon
  • Salt and Pepper
  • 4-6 large romaine leaves
  • Lemon quarters for garnish (optional)
 


Description

Wash the lentils. Cook them for approximately 20 minutes or until soft but not mushy.
Place the bulgur in a bowl and pour hot water over. Allow the bulgur to soften and swell (about 10 min.). Pour the excess water off.
Clean the red and green peppers. Remove the seeds and cut into small pieces.
Pour the water off from the lentils and add to the bulgur. Add the paprika, chopped onion and pine nuts.
Mix the lemon juice, salt and pepper and pour over the salad. Mix all well together.
Using one romaine leaf per person, fill the leaf with salad. It will look like a small canoe.
Garnish with lemon pieces.
