Red Cabbage Salad |

Ingredients
- 1 Lg.
Red Cabbage
- 1 can
Pineapple chunks
- 3 stalks
Celery, chopped in fine pieces
- 75
grams Walnuts, chopped
- 1 Green
Pepper, chopped
- 2 Oranges
(or 1 can mandarin oranges)
- Dressing:
- 1 Tbs.
Mayonnaise
- 5Tb.
Yogurt
- Salt,
& Pepper

Preparing the vegetable mixture |

Description
Remove
the outer leaves of the red cabbage and cut the bottom with
the core off so that the cabbage can sit upright. Cut the
top 1/4 part off. Hollow out the cabbage with a sharp knife,
so the cabbage will be a shell about 1 inch thick. Chop the
cabbage that was removed from the center and the top 1/2 part
into small pieces. Add the chopped green pepper, pineapple
celery and walnuts. Remove the peal from 2 oranges and separate
the sections. Add the sections to the vegetable mixture. Mix
the dressing and add to the mixture. Fill the cabbage shell
with the mixture and serve.
