 Quick Artichoke Pasta Salad
   

Ingredients

  • 2 cups Pasta
  • 1 glass marinated Artichoke hearts
  • 1 cup sliced Mushrooms
  • 8-10 Cherry Tomatoes, halved
  • Black Olives without the stone
  • 1 Tbs. Parsley, finely chopped
  • 1/2 t Basil
  • Salt & Pepper
 

Description

Cook the pasta rinse with cold water, drain and place in a large salad bowl.

Add the artichoke hearts with the marinade, the mushrooms, tomatoes, olives, parsley and basil. Season with salt and pepper and gently toss. Cover and cool in refrigerator for at least 4 hours before serving.
