Lentils (I prefer the red or yellow as they are milder though
all are good)
2 Celery
stalks (thinly sliced

red bell Pepper
2 Onions
(minced)
2 cloves
Garlic (minced)

cup Balsamic Vinegar

cup Olive Oil
Cumin

tsp. Salt

cup Walnuts (chopped)
Description
Cook the
lentils with some salt, cumin and a bay leaf. Cook until tender
but not too soft-about 7 min. Drain and cool (discard the
bay leaf ). In a small bowl combine the rest and pour over
the lentils. This is great warm or cold.
