 Crunchy Wheatberry Salad
   

Ingredients

  • 200 grams Wheatberries
  • 250 ml Vegetable broth
  • 1 large Sweet Red Pepper, chopped
  • 2 Tomatoes, chopped
  • 1 Onion, minced
  • 200 grams Mushrooms, sliced
  • 80 grams frozen Peas
  • 1 small can Corn
  • 2 Stalks Celery, diced
  • 1 Bunch Parsley, chopped
  • 80 ml Cream
  • 1/2 Lemon, juiced
  • Herbs to taste
  • Salt and Pepper
 

Description

Soften the wheatberries by cooking them in the vegetable bullion for about 20 minutes. Drain and cool. Prepare the other ingredients and mix.
