 White Bean Salad (France)
   

Ingredients

  • 1 lg. can white beans, drained
  • 1/2 cup. chopped parsley
  • 1/4 cup. olive oil
  • 3-4 Tbs. wine vinegar or cherry vinegar
  • 2 cloves garlic minced
  • 1 tsp. tarragon
  • Dash of nutmeg
  • 1/2 tsp. salt
  • 1 tsp. honey
  • Dash of Tabasco

You can use either the small white beans or the great northern beans. It tastes great with either, although as a traditional fresh salad it would be the smaller beans.

White Bean Salad

Description

Put the beans in a nice bowl and add the parsley. Mix the dressing well pour over the beans and parsley and mix well. Allow to season at room temperature for at least 1 hour or if made ahead refrigerate for 6 hrs. then bring to room temperature before serving. Looks lovely on a bed of Bibb lettuce.
