 Olive and Spinach Pockets
   

Ingredients

  • 200 g Flour
  • 200 g Butter, softened
  • Pinch Salt
  • 180 ml cold Water

Filling

  • 60 g Spinach
  • 1 Onion, finely chopped
  • 2 Tbs. Black Olives, finely chopped
  • 3 tsp. Lemon juice


Description

  • Place the flour in a bowl with a pinch of salt and cut the softened butter into it until there is a soft crumbly mixture. Stir in the cold water and mix to for a ball. Using a tablespoon full of dough form about 30 small balls and roll into circles.
  • Preheat the oven to 325F and oil a baking sheet.
  • Sauté the onion and add the spinach, at last add the lemon juice.
  • In the middle of each circle of dough place about 2 teaspoons of the spinach mixture and fold the circles in half. Seal closed pressing a fork around the edge. You may want to brush oil on the dough for a shinny finish and bake in the oven for 15 min. or until golden brown.
