Ingredients
- 2 bunches of fresh
Coriander Cilantro or Culantro
- 1 Tbs. Olive Oil
- 1 Onion (chopped)
- 2 cloves Garlic (minced)
- 2 tsp. ground cumin
- 11/2 Tbs. Paprika
- 1 32 oz can Tomatoes,
with juice (chopped)
- 1 qt. Water
- 4 Tbs. Tomato Paste
- Cayenne pepper to
taste
- Sea Salt and freshly
ground Pepper
- Juice of 1 Lime (or
more)

This is a French recipe
that I got from a German lady it really is quite special. The secret
is the coriander (can also use cilantro or culantro- but what ever,
use a lot of it!).

Description
Tie the bunches of cilantro
or coriander leaves together with a string so that you can remove
them later. Heat the olive oil and sauté the onion. Add garlic,
cumin, paprika and sauté. Add the tomatoes, the tomato paste
and the water. Season with salt and pepper and add the coriander
or cilantro bunches. Simmer, covered for about 30 minutes. Remove
the cilantro of coriander and puree with a blender or food processor.
Return and stir in the cayenne and limejuice. When it is warm it
is ready to serve.
