 Minestrone
   

Ingredients

  • 1 med. Onion, chopped
  • 2 cloves Garlic, minced
  • 3 Tbs. Olive oil
  • 1 Qt. Water
  • 1 small can Kidney beans
  • Fresh veggies including Carrots, Zucchini. Green beans, Wax beans, Potatoes, Celery, Peas, Cabbage Okra and Turnips
  • 2/3 tsp. Basil
  • 2/3 tsp. Oregano
  • 2/3 tsp. Paprika
  • 2/3 tsp. Rosemary
  • 1 small can Tomato paste
  • 1 lg. can stewed Tomatoes
  • 1/2 cup Pasta
  • Salt & Pepper
  • 1/2 cup Parmesan cheese (optional)
Minestrone Soup

Description

Using a large pot, sauté the onion in the olive oil. Wash and cut all vegetables in bite size pieces, add water and stewed tomatoes salt pepper and herbs. Simmer for 30-45 min. Add tomato paste and pasta and cook until pasta is soft. Serve hot with Parmesan cheese as a topping.
