 Pumpkin Soup
   

Ingredients

  • 450 gram Pumpkin
  • 1 Onion
  • 1&1/2 Tb. Oil
  • 3/4 Liter Water
  • 2 Vegetable bullion cubes
  • Salt and Pepper to taste
 


Description

Cut the pumpkin in cubes or small blocks. Remove the seeds and the skin.
Cut the onion in thin ringlets. Heat the oil in a frying pan and sauté the pumpkin and onion ringlets.
Add the water and bring to a boil. Lower the heat and simmer for about 20 minutes.
When the pumpkin is soft puree all ingredients.
Add salt and pepper to taste and serve.
